Formerly a Carmelite convent dating back to 1643, and more recently La Maison Jeunet, owned by Michelin-starred chef Steven Naessens, the hotel is inspired by its origins and imbued with the values of simplicity, hospitality and sharing<\/span>.<\/p>\n

The tones are natural, the materials raw and the entirety distinguished.<\/p>\n<\/div>\n

The project was entrusted to Benoit and Rachel Convers, artists, and designers, who bring this setting back to life in the summer of 2022, by shaping the materials by hand and enhancing the robustness of the craftsmanship of yesteryear. Each table and each armchair are a unique piece with sober lines carved from the trunks of hundred-year-old beech trees.\u00a0<\/span><\/div>\n

\n<\/span>In the restaurant, with the new Chef Julien Durosier, they decided to offer a traditional cuisine based on the idea of sharing, as illustrated by the large central table in the style of a refectory and the dishes to be shared in casseroles.<\/span><\/div>\n

The two floors of the Carmel 1643 hotel have fourteen renovated rooms ensuring a comfortable stay in the heart of Arbois. The rooms are air-conditioned (excluding Standard rooms) and quiet. Some have a garden and others can accommodate families of 4.<\/span><\/div>\n
