Carmel 1643 is in the heart of
the historic town of Arbois completing the collection
Château de Germigney.

FROM THE ORIGINS TO A NEW SETTING

It is in this town of Arbois, in the heart of the Jura vineyards, that this new address opens its doors to guests in search of authenticity.

Formerly a Carmelite convent dating back to 1643, and more recently La Maison Jeunet, owned by Michelin-starred chef Steven Naessens, the hotel is inspired by its origins and imbued with the values of simplicity, hospitality and sharing.

The tones are natural, the materials raw and the entirety distinguished.

PRAISE FOR HANDCRAFTED MATERIALS

The project was entrusted to Benoit and Rachel Convers, artists, and designers, who bring this setting back to life in the summer of 2022, by shaping the materials by hand and enhancing the robustness of the craftsmanship of yesteryear. Each table and each armchair are a unique piece with sober lines carved from the trunks of hundred-year-old beech trees.

In the restaurant, with the new Chef Julien Durosier, they decided to offer a traditional cuisine based on the idea of sharing, as illustrated by the large central table in the style of a refectory and the dishes to be shared in casseroles.
